On Father’s Day, we are spending our weekend at home. ZL wanted to do her baking of brownies muffin and to try on simple scones. This is her first trial on baking scones. Usually, we are having scones at SweetChatz and that would be a history if we can simply made at home!
These are the ingredients that we need:
- 2 1/4 cups self-raising flour
- 2 tbsp icing sugar
- 1/4 tsp salt
- 40g butter
- 1 cup milk
- 1 tbsp milk, extra
- Raspberry or whatever flavored jam, double cream and extra icing sugar mixture to serve
Sift flour, sugar and salt into a bowl. Rub in butter with fingertips. Make a well in center.
Pour milk into well.
Using a flat-bladed knife or something similar, gently stir dough just comes together.
Turn dough out onto a lightly floured surface. Knead gently until smooth. Press dough into a 2cm thick round. By using a 5cm round cutter, cut out scones. Press leftover dough together. Repeat to make around 12-15 scones from the same dough. Place scones, just touching, in prepared-greased pan. Brush with extra milk. Preheat oven to 200C using fan-forced. Bake for about 15 minutes or until golden colored. To test if scones are cooked through, tap gently on top. If it makes a hollow sound, the scones are cooked.
Sandwich with jam or nutella and whipped cream or mascarpone, and dust with icing sugar. Serve. This is my father’s day treat from ZL (first time to celebrate as a father). Brownies muffin + scones + earl grey tea. Thanks baby!
